- Ahora formamos las albóndigas en pequeñas bolitas. Y las vamos pasando por pan rallado hasta completar toda la mezcla.
- Aceite de oliva de nuevo en un sartén, una vez que esté caliente, vamos agregando nuestras albóndigas. En una primera instancia, cuando recién las coloquen traten de no moverlas hasta estar doraditas ya que podrían desarmarse. Se van dando vuelta hasta quedar doradas por ambos lados. Luego las quitamos del fuego y las reservamos.
- Aprovechamos y usamos el mismo fondo de cocción, agregamos aceite y un par de ajos picados hasta dorar. Incorporamos los 3 tomates pelados y picadito muy pequeño, sal, pimienta y dejamos cocinar un rato.
- Luego de pasado unos minutos incorporamos las albóndigas a la salsa (aún en el fuego) sin moverlas demasiado. Dejamos 5 minutos y listas! Yo le agregue un poco de queso muzzarella y las gratiné, acompañadas de un poco de arroz (opcional).
